A throwback to those days when everybody had time to watch CLOY, this kimchi marks the days when we were finally able to source produce from our farmers in Mountain Province during the ECQ, so we like this kimchi a lot. Sentimental reasons aside, this kimchi uses only organic highlands produce and made the traditional way using Korean pepper porridge. Because this kimchi is vegan and does not use fish sauce, we added some organic kombu to amp up the umami before being fermented for much of the lockdown, deepening the flavors while retaining a crisp freshness.
Ingredients: Organic highlands wombok, radishes, and carrots, Korean pepper flakes, rice flour, soy sauce, kombu, onions, ginger, and garlic.
